Michelin honors 3 restaurants at Capella Hanoi

Hibana by Koki is one of four Vietnamese restaurants to be recognized with one Michelin Star, while Backstage and Izakaya by Koki have been named among the top Michelin Selected Restaurants.

Hibana by Koki presents a theatrical experience at a 14-seat counter in the basement of the Hanoi-based Capella Hotel, with chef Hiroshi Yamaguchi cooking teppanyaki dishes rich in complex flavors.

"The menu features a distinctly decadent edge, epitomized by the premium ingredients flown in twice a week from Japan, such as abalone, spiny lobster, sea urchin, Yaeyama Kyori beef and Hokkaido hairy crab," the renowned food guide Michelin commented.

Meanwhile, tucked away in the basement of the Capella Hotel, Izakaya by Koki is a modern and chic setting, with various seating options, including intimate sofa areas.

"Izakaya by Koki takes place alongside a secluded Teppanyaki setting ideal for celebrating special occasions. Each room exhibits craft through a culinary lens that invites thought and conversation," Capella Hotel says on its website.

According to Michelin, guests are welcomed with a complimentary sake with aromatic notes of tropical fruit. Sourcing 70% of its ingredients from Japan, this restaurant has an extensive menu including a specialty of grilled dishes like the grilled black cod with Saikyo sauce, and housemade yame matcha or black truffle ice cream as signature dessert.

Another restaurant named among the top Michelin Selected Restaurants at the Capella Hotel is Backstage.

The Michelin Guide commented that dishes respect the heritage of the north but combine modern techniques with European touches that will "leave your tastebuds singing an aria of delight".

"They also serve steaks from a Josper grill and sharing dishes for two. The theatrical setting showcases stunning costumes from the opera’s greatest performances," it added.

Four Vietnamese restaurants have been recognized with one Michelin Star for their high-quality cooking and outstanding culinary experience that is worth a stop when travelling to Vietnam. The awarded are Hibana by Koki, Gia and Tam Vi in Hanoi and Anăn Saigon in Ho Chi Minh City, Michelin announced last Tuesday.

There are currently over 3,000 Michelin-starred restaurants in nearly 40 different countries.
