Every Half’s sustainable coffee roastery: from beans to machines

Vietnamese coffee brand Every Half has officially opened a new roastery at its Thao Dien location in District 2, Ho Chi Minh City, which not only supplies freshly roasted beans for the entire store network but also reflects Every Half’s deep commitment to sustainability and transparency in the coffee industry.

While coffee shops are the public face of the business, behind the scenes, roasteries play a vital role in advancing environmentally conscious practices within the supply chain. From sourcing and production to operations and energy use, Every Half is building a model that addresses the environmental challenges facing the coffee sector.

Studies show that coffee is particularly vulnerable to climate change. Rising temperatures, extreme weather events, and shifting rainfall patterns could make nearly half of current coffee-growing regions unsuitable by 2050. In response, sustainable roasteries like Every Half’s are essential to mitigating climate impacts and ensuring the long-term viability of coffee farming.

Spanning over 600 square meters, Every Half’s Thao Dien roastery is designed as a minimalist, wooden-structured facility that’s open to customers. Visitors can observe every step of the coffee-making process - from roasting and packaging to storage - helping them understand what goes into every cup. Simplicity and openness are key, reinforcing the brand’s values of transparency and education.

Sustainability is at the heart of the Thao Dien roastery’s mission, encompassing everything from coffee sourcing to equipment and energy usage.

First is Every Half’s sustainable coffee sourcing. Every Half partners with farmers in some provinces like Dien Bien in the north and Lam Dong and Dak Lak in the Central Highlands to cultivate climate-resilient coffee varieties such as Starmaya, Marsellesa, Centroamericano H1, Liberica, and Fine Robusta. In Lam Dong alone, over 8,000 new seedlings have been planted using natural farming models.

The company is also involved in cooperative farming models, helping producers access improved tools, technologies, and market connections - while ensuring a stable income. Every Half implements a 100% collection strategy for its coffee crops and applies advanced processing technology to maintain bean quality and traceability.

Second is its modern, low-emission machinery. To reduce emissions during roasting, Every Half has invested in advanced equipment. The roastery uses two high-tech machines: the Giesen W6A (6 kg/batch), which delivers a sweet, roasted profile, and the Loring S15 (15 kg/batch), known for its bright, clean flavors. The Loring S15 also features a built-in smoke treatment system that minimizes odor and purifies the air during operation.

Third is its eco-friendly daily operations. Every Half applies sustainability not just to roasting but to its day-to-day practices. About 60% of the roastery’s electricity is sourced from solar power, and roughly 25% of its interior materials are recycled. Even small items like paper coasters are reused instead of discarded. Customers are encouraged to visit in person to support a more sustainable coffee culture.

The roastery is more than just a production space - it's a platform for climate adaptation. Every Half is working with farmers in Dien Bien, Pleiku, Lam Dong, and Dak Lak to test hardy coffee varieties like Starmaya and Liberica that can better withstand increasingly unpredictable conditions.

For us, this roastery isn’t a final destination - it’s a concrete step in our journey to make coffee more transparent, more sustainable, and more accessible every day," said Vo Duy Phu, co-founder and CEO of Every Half.

Founded in 2021 by Tran Le Minh Truc (COO) and Vo Duy Phu, Every Half began as a coffee roaster before expanding into a retail chain. With over a decade of experience in Vietnam’s coffee industry, Truc's roots in Buon Ma Thuot - one of the country’s coffee heartlands - have helped shape the company’s vision for a more sustainable coffee future.
